A few important notes about copper. Copper cookware is both beautiful and functional but it does require a bit of attention. If you wish an aged look on the exterior, then the exterior requires little attention other than normal cleaning. If you want to maintain the bright shine, then please be aware that it will take old fashion "elbow grease" and time to keep everything bright and shinny. Drying the surface after washing, with a soft towel, will help keep the shine for longer periods by keeping water spots to a minimum. For cookware that has a tin lining, it requires special attention. Tin is a soft metal that does not react with acidic foods, is not allergenic, and does not rust. It is applied to copper by heating the copper pan to a temperature over 400 degrees F so that pure tin will melt and can be applied to the bare copper. Because of this, it is advisable to keep the cooking temperature at 400 degrees or lower to keep from damaging the tin lining. A tin lining can also be damaged by using metal cooking tools and it should never be scoured when cleaning. Tough spots are normally removed from tin by simply letting them soak in water for a while. A tin lining can have many different colors over it's lifespan. It can be anywhere from a bright shine to a very dull, almost gray color. This wide range has no bearing on how well the tin works and on how safe it is. With that said, a tin lining will wear out. The amount of time that a tin lining will last depends on how heavily the pan is used and how much abuse it sees. A couple of small spots where the copper is showing through is normally not much to worry about, proving the copper is not corroded in any way. When larger spots begin to show, it is time to have the item re-tinned. Once re-tinned, the item will be ready for another long period of service.
